Lemon Soya Cake

PowerBeans Reduced Sugar Fresh Soya Milk
Ingredients
180ml extra virgin olive oil
2 eggs
250ml MARIGOLD PowerBeans Reduced Sugar Fresh Soya Milk
2 tbsp fresh lemon juice
2 tbsp fresh lemon zest
200g sugar
250g all purpose flour
1½ tsp baking powder
½ baking soda
1 tsp salt
Method

Preheat oven to 170°C.

Combine Dry Ingredients- flour, sugar, baking powder, lemon zest, baking soda, salt & set aside.

Combine Wet Ingredients- olive oil, MARIGOLD PowerBeans Reduced Sugar Soy Milk, lemon juice & set aside.

Beat the 2 eggs together.

Combine wet ingredients with eggs.

Fold dry ingredients into wet ingredients.

Pour into a lined and greased baking tin.

Bake for 50 mins or till toothpick inserted comes out dry.

Cool in baking tin for 20 mins then flip over to a rack.
