In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Add the melted coconut oil and vanilla extract to the soya milk mixture, then pour into the dry ingredients. Stir gently until just combined.
Heat a non-stick pan over medium heat. Pour in batter to form pancakes and cook until bubbles appear on the surface, then flip and cook until golden brown.
Serve warm with maple syrup and fresh berries.
