Low Fat Nata De Coco Yoghurt
Cut cod fillet into cubes.
Preheat oil in a pan over medium heat. Gently place fish in pan and fry until cooked. Remove and set aside.
In a bowl, mix egg whites and MARIGOLD Yoghurt together and beat them until light and slightly airy.
Preheat pan to bring up its temperature. Then add oil to bring down the temperature. Drain oil out leaving just a bit in the pan.
Gently pour in egg white mixture into the pan over medium heat, stirring while cooking. When egg whites are about 80% cooked, add in fish cubes and continue to stir-fry until eggs whites are cooked through.
Placed egg whites and fish on a plate and garnish with diced ham and coriander. Serve hot.
